Libellula Classico is made from Leccino olives ethically sourced and sustainably harvested at peak ripeness in November 2022 and cold-pressed within 24 hours. These large olives are prized for their light, sweet flavor and are one of the primary cultivars used in Italian olive oil production!
Pairs beautifully with TART Salad and Soup vinegar to make a super simple (not to mention delicious) salad dressing!

After learning that the family farmers in their town were abandoning their groves due to the challenges of climate change, father-daughter duo Julia and Camillo founded farming collective Libellula. In the hills just outside of Rome, these small-scale farmers are pooling their knowledge and resources and making regeneratively farmed extra virgin olive oil that's a thing of true beauty!
