This non-alc cuvée begins with Stevnsbaer sour cherries and red currants that are fermented with pichia kluyveri yeasts. This gets combined with short fermentations of bay leaf water kefir, ice-clarified tomato juice, and lacto-fermented beetroot before finally being infused with green peppercorns that have been blanched (seven times!) and pasteurized to remove any bitterness.
